Banana Bread

Here's a super fast banana bread for those few bananas that never get eaten. So instead of throwing them away make yummy home made banana bread for the family!
You will need:

1/2 cup margarine

1 cup sugar

2 eggs

3-5 ripe bananas

2 cups flour

1 tsp bakin soda

1/2 tsp baking powder

1/2 tsp salt

Directions:

1) Cream margarine and sugar

2) Then add eggs and beat until smooth

3) Mash up bananas and mix into liquid mixture well

4) Mix dry ingrediants in a separat  bowl

5) Then slowly add to the liquid mixture

6) Bake at 350 for 40-55 min

Cupcakes and Vanilla Butter Frosting

I made these for a party and every lass one was gone. They take some time but are great and you can decorate them to your liking.

You will need:

4 lg egg whites

1 cup 2% milk

1 tbsp pure vanilla extract

3 cups sifted cake flour

1 1/2 cups sugar

4 tsp baking powder

3/4 cup (12 tbsp) salted butter, room temperature

Directions:

1) In a bowl combine egg whites, milk and vanilla, whisking lightly. Set aside.

2) In stand mixer fitted with paddle attachment, stir together cake flour, sugar and baking powder.

3) Add in butter and mix on low until the flour settles down and then turn it up to about speed 3 and let run until butter is fully incorporated into the dry ingredients, about 2 minutes.

4) Return to low speed and mix in the liquid in 3 equal parts, mixing for about 20 seconds in between each addition. After adding in the last of the liquid, put back up on speed 3 or so and let mix for another 20 seconds.

5) Spoon equally into 24 muffin tins (with liners) and bake in a preheated 350 degree oven for 18 minutes.

6) Allow to cool fully and then frost.

Vanilla Butter Frosting

You will need:

1 cup salted butter

4 cups icing sugar

1 tbsp pure vanilla extract

1 tbsp coffee cream

To make the frosting, fit stand mixer with the paddle attachment and cream the butter well while you measure the other ingredients. Add the vanilla, cream and icing sugar and turn on the lowest speed or you'll be in a shower of icing sugar. Once the sugar starts to combine, turn the speed up gradually until you reach about mid-speed. Allow to continue beating 4-5 minutes, or until light and fluffy.

Cheese ‘n’ Chicken Broccoli Bake

This is a great way to get kids to eat some broccoli and its supper fast to make.




You will need:

2 chicken breasts


1 can Broccoli cheese soup


1 can milk


3 cups Rotini pasta


½ cup chopped broccoli


1 cup grated cheddar cheese or your favorite


1 clove crushed garlic


2 tsp Italian seasoning


1tsp salt


¼ tsp pepper


Directions:

1) Cook pasta


2) Chop up chicken into bite sized pieces


3) Sauté chicken and garlic and all the seasonings


4) Once chicken is slightly browned add soup and milk stir until smooth


5) Drain pasta,  put into casserole dish and add chopped broccoli


6) Pour chicken mixture over pasta and mix up gently


7) Sprinkle cheese all over the top


8) Bake at 350° for 30 minutes


9) Serve hot  with garlic toast

Strawberry Orange Smoothie

A smoothie is a great way to cool down in the summer, and I'd have to say that today was the first hot day so far this year. So I decided that I would cool down with one. It makes enough for 4 so invite some friends over, lay in the sun, and enjoy a nice icy smoothie!

You will need:

1 can strawberry puree (Bacardi works)

10-12 strawberrys (cut in half)

1/2 cup orange juice

1 tsp lime juice

1/4 cup strawberry yogurt

1 1/2 cup ice

Directions:

1) Put it all in to a blender put the lid on and blend it all up.

2) Then pour into glasses and enjoy!
